For thousands of years mushrooms have been traditionally used in Chinese medicine and still to this day. Mushrooms are a familiar food. Mushrooms are flavorful, they add pleasant textures and mouthfeels to many meals. Many people if not most we talk to are not aware of the nutritional benefits of mushrooms. As a nutritional powerhouse they have more than flavor and texture to offer. As you eat them and learn about their nutritional benefits you may just think of them as essential superfoods! “Let your food be your medicine and medicine be your food” This statement by Hippocrates is more relevant now than ever, that modern science has found so many active and healing compounds. Some species of edible mushrooms have a nearly complete complement of all necessary nutrients-vitamins, minerals, fiber, protein, carbohydrates, and fatty acids. It is important to make sure mushrooms are well cooked to absorb these nutrients and break down the tough fiber.
